A very simple, elegant and yummy breakfast. Now before I type out this recipe for you, I just have to tell you of the chaos that took over my house while attempting to bake this. I woke up early so that I could have a cup of coffee and make my family a little special something for breakfast. After the coffee pot beeped at me to let me know that my coffee was done I poured myself a cup, leaned up against the counter took in a big whiff a took my very first sip.. Ahhhh glorious coffee!! Well, I then started to take out the utensils needed, preheat the oven and line up the ingredients along counter. I then started my baking while sipping my coffee... about half way through I realized.. boy this is kinda runny looking. It was at that moment that I realized I had smoke rolling out of my oven. Oh, CRAP!! I dump in the apple sauce and run to the oven to see what on earth is going on. After about 20 minutes of a smoking oven I realized a candle had been moved to the oven and had dripped UNDER the drip pans. Thats what I get for getting the cheap-o ones! The smoke eventually stopped and I continued with mixing of ingredients. I finished up adding all the flour and mixing only to think, "hmm, this is a lot runnier than normal". Oh, CRAP again! I added 2 cups of apple sauce. I continue fixing my mess-up and double up the rest of the batch so it will actually taste good. About the time I finally get the mix into the oven, my oldest walks downstairs and asks... "Mom, why is it all smokey down here?" I grab my cup of coffee to take a drink only to realize my nice and hot coffee is now cold. BLAH! and reply with "it's a long story... breakfast will be done in an hour or you can grab a bowl of cereal." He opted for cheerios. lol

Batter:
3 eggs
2 cups sugar
1 cup apple sauce
1 teaspoon vanilla
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
4 cups chopped apples
Topping:
Mix eggs, sugar, apple sauce, vanilla, baking soda and salt. Stir in apples and flour. Put half the batter into 2 loaf pans then sprinkled with 1/2 the topping. Pour remainder of batter into pans then sprinkle remaining topping on top of dough.
Bake at 350 degrees for 1 hour.
