Carrot Cake "cheater" Cookies

Carrot cake "cheater" cookies.This is one of my all time favorites when I'm in a baking mood but also kinda a lazy mood. lol Now that isn't actually the name of these but what I call them. They are cheater cookies because they are so quick and easy!! Many many years ago my Grandma gave me a cookbook called 101 things to do with cake mix. For the longest time it just sat in my cupboard being ignored and left out. I see woody from toy story sitting up on the bookshelf. The poor thing all neglected. Anyways, one day I decided to open it up and see what all it had contained in it's pages. We gave one of the recipes a go and oh my was I suprised! These are so easy to make and the kids make them all time. I haven't ventured too far into the recipes as I never get passed the cookies! lol But one of these days I will.. This is one of my fall back on recipes for a quick easy dessert that my husband loves.. Try them warm with a small scoop of vanilla bean ice cream.



Ingredients:
1 box of carrot cake mix
2 eggs
1/3 cup of veg. oil

Directions:

  1. Preheat oven to 350 degrees F
  2. Mix together cake mix, eggs and oil in a bowl until all cake powder is absorbed.
  3. Roll cookie dough into small balls and place evenly on cookie sheet lined with parchment paper.
  4. Bake 6-8 minutes
  5. Remove from pan and cool.
  6. Once cool frost with cream cheese frosting and just eat 'em nice and warm
