This past week we had a potluck dinner at our home. Let me just say we had a FULL house. There was some very yummy food! Our theme for the night was Italian. Mmmmmm, I made some rolls. I absolutely love these. The original recipe says bread-sticks. I on the other hand was a little tired and took the easy way out and just did rolls with the recipe. This can also be done in a breadmachine on the dough cycle.
Ingredients:
1 1/8 cups water
2 tablespoons olive or canola oil
3 tablespoons grated parmesan cheese
2 tablespoons sugar
3 teaspoons garlic powder
1 1/2 teaspoons salt
3/4 teaspoon minced fresh basil (dried also works well)
3 cups flour
2 teaspoons active dry yeast
1 tablespoon butter or stick margarine, melted
Directions:
Bread Machine
In Bread machine pan, place the first nine ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). When cycle is completed, turn dough onto a lightly floured surface. Divide into 20 portions. Shape each into a ball; roll each into a 9-in. rope. Place on greased Baking sheet. Cover and let rise in a warm place for 40 minutes or until doubled. Bake at 350 degrees F for 18-22 minutes or until golden brown. Remove to wire racks. Brush warm breadsticks with butter.
By Hand
Combine Water and Sugar. Stir until sugar is disolved then add in yeast. Let proof (about 10 min.) Stir in salt, oil, spices and flour. Stir until well mixed them pour on floured surface and knead until soft ball is formed.
Place dough in a lightly greased bowl and let rise until double in size (about an hour). Then punch down and knead a few times and form dough into balls for rolls or into long ropes for bread-sticks. Place on greased baking sheets. Cover and let rise in a warm place for 40 minutes or until doubled. Bake at 350 degrees F for 18-22 minutes or until golden brown. Remove to wire racks. Brush warm breadsticks with butter.
