Well it's another beautiful spring day today here in Montana! The birds are singing and I have my tomatoes, bell peppers, jalapeƱos and eggplants sitting on the back porch getting used to life outside of a controlled environment. One day soon they will be producing delicious fruits.. Mmmmm, I can't wait!
Today is our very first day with our 110 day challenge and so far it's going really well! We had some spiced apple steel cut oats in the crockpot for breakfast. Everyone loved it except my oldest who thinks oatmeal and this challenge will be the death of him. lol But with a little maple syrup he ate the rest with no complaints.
Shortly after breakfast I went on a search for whole wheat tortillas. We tried a few recipes and have one that everyone really enjoyed, but still have a couple more to taste test just in case. We used our new favorite tortilla recipe and made black bean and cilantro quesadilla. Boy were they yummy! Again my oldest looked at me like I was crazy for even making something like that for him, but by the time he had finished lunch he wanted another and it's now on his list of lunch time favorites! One point for whole foods.. Woohoo!
Dinner tonight will be a chicken pasta. I have a local chicken cooking in a pot with herbs and other yummy stuff. I'm going to have one tasty chicken by tonight and some awesome stock to use later in the week.
