Camping

Well, I am back from a much needed time away from the house. We went on a little mini vacation for 3 days out in the middle of nowhere. Just enjoying the family and the great outdoors. It was so nice and for the most part, relaxing. The munchkins really enjoyed seeing all the deer come through camp and the sweet momma elk. Unfortunately she had her baby hidden and we couldn't see it. The kids of course also really loved poking sticks around in the camp fire and making sure it didn't go out. Only down side, I'm going to be washing laundry forever to get all that smoke out of the clothes. lol But it was so worth it and we are already planning our next camping trip.

For  the most part we stuck to our challenge. We got a little grief from a friend that joined us and thinks we are crazy for trying to get rid of all the processed foods from our diet. But he didn't seem to mind our diet when he was eating the food. hehehe. The only things that we ate that were on the do not eat list was the smores (I tried to find a substitute for the kids and couldn't find one) and we picked up a bag of chips. It took me almost a full day of cooking to get everything ready meal wise. I had each meal organized and labeled into gallon ziplock bags and each item in a small sandwich ziplock back. What I could pre-cook, I cooked it at home and cut veggies up at home to make clean up easier.

Here is our menu plan for our few days of camping..

Monday 

Breakfast
Oatmeal at home
Lunch
Chicken Hotdogs on whole wheat buns with strawberries
Dinner
Beef Fajitas with apples on the side

Tuesday

Breakfast
Campfire potatoes with bacon and onions. Strawberries, grapes and cherries on the side
Lunch
Sandwiches with fruit
Dinner
Pasta salad bar. Topping were feta, cheddar, chicken, beef, grilled artichokes, tomatoes and mixed greens

Wednesday

Breakfast
Fruit, eggs, bacon and left over potatoes
Lunch
left overs while we tore down camp and got ready to head home

That night was one of the best. It was so relaxing watching the sun set.
