Granola Bars/Cereal

One of our favorite snacks since we started this challenge has been Granola and yogurt. I thought I would share the recipe with all of you. It's so easy to make and I pretty much just wing it on whatever I have on hand at the time. Interchange the nuts with your favorites.. Throw in some wheat germ.. The possibilities are endless. Have fun with it and enjoy!



Ingredients:
4 cups of rolled oats
1 cup raw almonds
1 cup unsweetened shredded coconut
1/2 cup sunflowers seeds
1/2 cup sesame seed
4 tablespoons flax seed (I grind half of this)
3 tsp ground cinnamon
2 tsp ground ginger
1 tsp ground nutmeg
6 tablespoons unsalted butter
1/2 cup honey
1/2 tsp salt (can omit if you want)

Pre-heat oven to 250 degrees. Combine all dry ingredients into a large bowl. Heat the butter and honey in a small sauce pan until the butter is melted then pour over the dry ingredients. Mix until all the oats are coated well and evenly moist.

Pour the granola out onto a baking sheet lined with parchment paper. Spread evenly on pan and bake for an hour and 15 minutes. Once granola is golden brown remove it from the oven to let cool. As it cools down it will get crispier. Once cool break apart and place in an air tight container. 

This recipe is also really yummy with dried fruit mixed in :)
