Popcorn

Popcorn is a naturally high in fiber, low in calories and fat (if air-popped), contains no sodium, and is sugar free. YAY! Which makes this one food that we eat a lot of instead of munching on chips, ice cream, cookies and all those other things that would pretty much just kill not only our challenge but also my diet. Everyone in the family loves it. The only draw back.. an air-popper must be in your house and when you are in a hurry they can be time consuming to use. Now a days we I want instant gratification. If it takes longer than a minute,  it's just way too long to wait. lol So I decided to see if I could make my own microwave popcorn.

Let me just say I wish I would of thought about this a LONG time ago! It's quick easy and healthy. I have started buying popping corn in bulk now. Here is what you need to make your own microwave popcorn bags.

Brown paper bags for sack lunches
Organic popping corn
Measuring cups
Rubber bands

Directions:

Place 1/4 cup of popping corn in paper bag and fold the end over 2-3 times to seal the bag and to keep the popcorn from flying out in your microwave. Then fold the bag in half and place a rubber band around it to keep the bag closed. I usually make around 30 at a time so we have a little stockpile and the kids can always make a quick snack.

To make the popcorn. Remove the rubber band and place bag in microwave. I only have to hit the popcorn button and I'm good to go. But if you don't have one of those on your microwave I'd start it out at around 2-3 minutes and stop it when there are about 3 seconds between pops.

Remove popcorn from microwave and dump into a bowl. Top with your favorite toppings. Some of our favorites are butter, garlic powder and salt. I am trying to watch my calories so I don't use the butter often and instead sprinkle a little water on the popcorn and do a shake of salt. The salt then sticks to the popcorn.

Enjoy!
