Week 4

I can't believe how fast this challenge is going by. It's crazy to think that we have been eating whole foods only for a month. We still have a ways to go but I can honestly say that this challenge is by far the best thing I have ever done for my family! There have been a few days (mostly last week) that we have fallen off the wagon. The day after our fall is not pretty. We all ended up with a horrible stomach ache, was super tired, grumpy and just over all felt like we were hit by a mac truck. It wasn't pretty! lol
Thankfully it was just a few days but boy did I learn my lesson. I really REALLY need to make sure I stock up on some things for those days that are just beyond crazy. The cheater days were the nights where it was getting late, everyone was grumpy and hungry. I don't like those nights. This week I'm going to be doubling up on meals as I cook for those crazy days and freeze them.


Along with feeling pretty amazing (minus the cheater days) the hubby and I have lost some weight. Which is a really good thing. I really need to get rid of the last two years of what I like to call my hibernation winter weight. lol As of this morning, my husband is down around ten pounds and I'm down almost nine. WOOHOO! The goal is to lose around thirty pounds.. I got a way to go but I'm determined to get there!

Monday
Breakfast: Apple Spiced Steel Cut Oats
Lunch: Black Bean and Cilantro Quesadillas
W/ whole wheat tortillas
Dinner: Crockpot Chicken and Veggies

Tuesday
Breakfast: Wheat Germ Whole Wheat Pancakes*
Lunch: PB&J on Whole wheat with fruit
Dinner: Herb-Pesto Barley Soup*

Wednesday
Breakfast: Apple Spiced Steel Cut Oats
Lunch: Black Bean and Cilantro Quesadillas
W/ whole wheat tortillas
Dinner: Stir-fry

Thursday
Breakfast: Egg Drops
Lunch: PB&J on Whole wheat with fruit
Dinner: Company coming over no clue yet.. lol

Friday
Breakfast: Cherry Almond steel cut oats
Lunch: Black Bean and Cilantro Quesadillas
W/ whole wheat tortillas
Dinner: Whole wheat spicy chicken pizza

Saturday: Shopping Day
Breakfast: Whole Wheat Muffins with Fruit*
Lunch: PB&J with veggies and Granola (Brown Sack Lunch)
Dinner: crockpot orange pork nachos*

Sunday
Finish off leftovers or quick and easy meals :)

Snacks for the week
Granola
Veggies with yogurt dip
Fruit
Almonds
Crackers



* Cooking double for freezer

Stacey ~ It sounds like you all are doing so good with the challenge. We've cleaned up our diets as well and it makes all the difference in how we feel. Keep up the good work. It's a really good life style change. Debi

It's amazing at how much a simple change can make you feel so much better! Although, I need to seriously find some healthy sweet recipes. lol. I'm having chocolate withdrawls.
