Berry Lemon Trifle

The weather here has been way too hot for my preference. Today, the weatherman is saying it will be somewhere around the 91 degrees mark. YUCK! Way too hot! To make up for all the hot weather we are having we are heading to friends house for a BBQ. I will be bringing dessert. What to make.. what to make. I was racking my brain of previous desserts that we had last summer. Which I might add is kinda difficult. Mostly because lately, I have the memory of a fish (Think Dori in Finding nemo). I think the sun is cooking my brain. But anyways back on topic. I coudn't think of anything and the husband wasnt much help. He said, "Just grab some ice cream". MEN! You would think he would know thats just not my style. Thats not how I roll. lol I always bring something homemade and ice cream? Well, that just isn't going to cut it.

I got up, to grab another cup of coffee and then it hit me! I remembered that I made a Berry Lemon Trifle dessert last summer AND all the ingredients will be keeping us on our challenge! WOOHOO! This recipe is so delish that I could eat the entire thing myself. It's one of those things where you sit down down with a bowl full and pop in a nice girly movie. Then procceed to go back for seconds and thirds and maybe fourths. Then think.. I should of just grabbed the entire pan. Sheesh, then I wouldn't have to get up and pause my movie so much. hehe Oh, wait. Am I the only one that does that? I hope you all enjoy this as much as I do! 


Ingredients:

1 premade angel food cake cut up into cubes
6- 6oz containers of lemon yogurt
1 pint heavy whipping cream
2-3 cups of mixed berries (strawberry, blackberry, blueberry, etc)
Mint (optional)

Directions:
  1. Place cubed angel food cake into a large cake pan or individual dishes.
  2. In a large bowl or mixer, whip the cream until stiff peaks are just about to form. Make sure not to over-beat though or the cream will become lumpy and start to turn into butter.
  3. Once your whip cream is ready fold in the yogurt.
  4. Spoon the yogurt mixture over the angel food cake cubes.
  5. Sprinkle with berries, garnish with mint and Enjoy!
